Yaji, the spice blend that makes suya what it is, is built on ground groundnuts (peanuts). Groundnuts are handled throughout this class, they are present on every work surface, and every participant works with them directly.

We cannot make this class safe for anyone with a peanut or tree nut allergy, and we are not able to offer a nut free alternative. If your child has a nut allergy, please book one of our other classes instead. Contact us and we will happily recommend one.


Nigerian Street Food for Kids and Teens

Nigerian street food is cooked over open flame and eaten standing up, at roadside stalls and night markets across the country. It is fast, smoky food that is meant to be shared. In this class we cook four of the dishes that best represent it, and everyone sits down to eat together at the end.


What you will learn

  • How yaji is built - understand the component spices in the blend and why the balance between them matters.
  • Preparing beef for the grill - how to slice against the grain so the meat cooks quickly and stays tender.
  • Cooking over direct heat - how to manage a hot grill so the outside chars without the inside staying raw.
  • Working with yeasted batter - how to tell when the batter is ready, and how to fry it safely.
  • Kitchen safety - knife handling and hot oil awareness, pitched to your child's age.

What you will make

  • Beef Suya - marinated in yaji and grilled over direct heat until charred at the edges.
  • Fried Yam and Stew - crisp fried yam served with a fresh pepper stew.
  • Grilled Corn - charred over the flame, the way it is sold on the roadside.
  • Puff Puff - light, yeasted and fried until golden.

What you will eat and drink

  • Everything you cook, eaten together at the end of class.
  • A choice of complimentary drink:
    • Zobo - hibiscus, ginger, pineapple
    • Chapman - cucumber, orange, lemon, blackcurrant
  • Water and tea provided throughout the class.

How the class will run:

  • All ingredients, equipment and aprons are provided.
  • We lead you through easy to follow demonstrations before you have a go at your own cooking station.
  • You work in pairs, one child with one adult, to make all four dishes together.
  • Once everything is cooked, we sit down and eat together, or you can pack a box to take home if you prefer.
  • You receive a digital recipe pack after class with everything you need to make these dishes at home.

Things to know before you book:

  • Every child aged 13 and under must be accompanied by an adult over 21 who is also cooking. The adult books their own ticket.
  • Young people aged 14 and over may attend without an adult. A consent form must be signed and returned before the class.
  • This is a hands on cooking class, so we are not able to accommodate spectators or provide a waiting area for friends and family. Everyone attending needs a ticket and needs to be taking part.
  • Alongside groundnuts, this class involves gluten. All food is prepared in a shared kitchen where fish, shellfish, dairy, egg and soya are also handled. Please tell us about any allergy or dietary requirement when you book so that we can advise you honestly about whether we can accommodate it.
