A Guest Chef Edition with Olayemi Ameen
Join us for a special Guest Chef Edition with Chef Yemss β pastry chef, founder of the TitΓ³ patisserie concept, and one of London's most exciting voices in contemporary African dessert.
Born in Lagos and trained in some of London's finest kitchens including Mosimann's and Quaglino's, Chef Yemss works at the intersection of classical French technique and Nigerian flavour. His signature is unmistakable: smoked uda, kuli-kuli cheesecake, and desserts that ask where heritage ends and innovation begins.
In this hands-on class, you'll work with Chef Yemss to master the pastry techniques behind three distinctive makes β and leave with a piece of his TitΓ³ collection in your hands.

How we'll spend our time:
- Uda Diplomat β build a pastry cream base from scratch, then infuse it with uda, a smoky West African pepper, to make a silky Diplomat cream.
- Tarts β roll, line and blind-bake tart shells to a professional finish, then fill with your choice of lemon curd, apple compote or chocolate ganache.
- Doughnuts β mix, prove and fry a pillowy doughnut dough with West African intention.
What you'll eat:
- Uda Diplomat β silky pastry cream infused with smoked uda pepper
- Tarts β your own hand-made tarts, filled and finished
- Doughnuts β light, pillowy and freshly fried
- TitΓ³ collection β every guest receives a piece from Chef Yemss's African-inspired macaron or bonbon collection to take home
How the class will run:
- All ingredients, equipment and aprons will be provided.
- Chef Yemss will lead you through demos before you cook hands-on at your station.
- You'll work in pairs throughout the session.
- Once everything's made, sit down together to enjoy what you've created.
- You'll receive a digital recipe pack after class with everything you need to recreate these at home.
Things to know before you book:
- You're welcome to book on your own β we'll pair you with another solo attendee on the day.
- This is a hands-on cooking class; we're unable to accommodate spectators. Everyone attending needs a ticket and must actively participate.
